The latest restaurant from celebrity chef Luke Nguyen has opened at the Treasury Casino and Hotel in the city, just in time for last-minute work Christmas lunches and late-night feasts. Fat Noodle is Luke’s second noodle bar, with the first Fat Noodle having opened at The Star in Sydney two years ago.

For high profile chef Luke Nguyen, the traditional Vietnamese pho holds a host of childhood memories. “One of my favourite dishes growing up, and I think for most Vietnamese kids, is pho,” says Luke. Of course, pho takes pride of place on the menu at Luke’s restaurant Fat Noodle at The Star Sydney and Treasury Brisbane. Fat Noodle, Luke Nguyen’s pan-Asian eatery at The Star, has views of twinkling lights of another kind, and they have names like “Emerald Jade” and “Rainbow Jackpot”. I’m talking about this 112-seater restaurant being located right on the poker floor of The Star casino. Like, right there.

Dishing up primarily Chinese cuisine, but also touching on Vietnamese, Thai and Malay fare, Fat Noodle draws on both Luke’s Vietnamese heritage and Chinese family history for menu inspiration. This contemporary noodle bar sees fresh produce channelled into both exotic and authentic noodle dishes amongst the revamped Treasury Casino setting.

On the menu, small plates include Vegetarian Spring Rolls of glass noodles, wood ear mushrooms, tofu and carrots and Atlantic Salmon Sashimi with mandarin, perilla, lemongrass and roasted rice powder. Of the noodle soups on offer, the Fat Pho Noodle of Luke’s signature beef broth, thinly sliced Angus sirloin and brisket, bean sprouts, Thai basil, chilli and rice noodles is a stand out, while the Abalone & Chicken Congee with Chinese Rice Porridge tempts our penchant for sea-sourced rarities. Wok and rice dishes also feature in a mix of meat and vegetarian offerings, with a large selection also gluten free.

Based at the casino, Fat Noodle is open late into the evening, allowing us to indulge in our love of Asian cuisine anytime of the day or night.

Luke Nguyen is the head chef and owner of the award-winning Red Lantern Vietnamese restaurant, and is one of Australia’s top celebrity chefs. He's also the author of the best selling books, Secrets of the Red Lantern and Songs of Sapa. Renowned for his Vietnamese heritage and cuisine, Nguyen also has a family history in China.

Luke Nguyen might have just jumped from travels in front of the camera on Vietnam's Reunification Express to a kitchen in Sydney's Royal Botanic Gardens, but he's lost none of his sense of adventure.

The TV chef has laboured on a new soy sauce ice-cream, sliding it on a dessert plate alongside miso caramel at Botanic House, the newly renovated and renamed restaurant in Sydney's most famous garden.

Nguyen sweated and fretted over the proportions of soy before he got just the right hit of savoury and sweet.

And he's not finished. 'I want to do a fish sauce ice-cream at some stage,' he says.

Botanic House is a brighter, lighter reimagining of the formerly tired and dark restaurant on prime Sydney turf.

All the window frames have been replaced, and blonde timbers, custom furniture and sculptures make the room barely recognisable.

The more accessible downstairs venue, Farm Cove Eatery, has also been given a makeover, but its menu isn't part of Nguyen's brief. Upstairs, which falls under the chef's domain, is where Nguyen is punching out his signature Asian food.

'I had to put salt and pepper squid on, it's Australia's national dish,' he jokes.

But there's a touch of inspiration from the gardens, the squid topped with native peppers. There's a clever 'roll your own' section to the menu with Vietnamese crepes ($22-$26) you fill with everything from tiger prawns to chorizo or mung beans and tofu. Just save room for the soy sauce ice-cream.
